Furikake Chex Mix

This Furikake Chex Mix is the perfect balance of umami and crispiness. Whether for game day or a casual get-together, this unique twist on a classic snack is sure to be a crowd-pleaser!
Ingredients
4 cups Rice Chex mix
4 cups Corn Chex mix
4 cups Honeycomb
4 cups of Rice Crackers of your choice
1/2 cup salted butter
2 tbsp soy sauce
½ cup granulated sugar
½ cup corn syrup
Seto Fumi Furikake, or your preferred furikake, to taste.
Preparation
1. Preheat the Oven:
- Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper for easy cleanup.

2. Prepare the Coating:
- Melt the butter in a pan for about 30 seconds to 1 minute.
- Once melted, stir in the soy sauce, granulated sugar, and corn syrup. Keep stirring until the mixture comes to a gentle simmer and the sugar dissolves completely (about 2-3 minutes). Remove from heat.
- Stir in the chex mix, honeycomb, and rice crackers until they are evenly coated.

3. Add Furikake:
- Sprinkle the furikake over the Chex mix and toss to ensure it’s evenly distributed throughout the mixture.

4. Bake the Chex Mix:
- Spread the coated Chex mix onto the prepared baking sheet in an even layer.
- Bake for 45 minutes, stirring every 15 minutes to make sure the mix is evenly coated

5. Cool and Serve:
- Once the Chex mix is golden and crispy, remove it from the oven and allow it to cool on the baking sheet.
- Once cooled, pour it into a bowl and serve!
