Shishito peppers
Shishito are a variety of sweet peppers grown in Japan and across East Asia. They are generally mild, but due to certain environmental changes during their growth, one pepper out of ten can be quite spicy.

Shishito can be skewered and cooked over a grill, or added to a hotpot or stew. One of the more popular ways to prepare shishito is to roast them in a pan with a little olive oil.

Roast the shishito on high to medium-high heat, in enough olive oil to coat the peppers. Flip them from time to time until they begin to blister on all sides.

Turn off the heat, season with salt and serve immediately. Instead if salt, try dipping them in ponzu (citrus soy sauce) or your favorite creamy salad dressing.
