Ingredients
1 Tbsp. oil
1/2 lb. diced chicken
3 cups sliced assorted vegetables (such as onions, green beans, zucchini, eggplant)
2 Tbsp. black bean sauce
1/2 cup water
2 tsp. cornstarch
1 tsp. sugar
Preparation
Heat pan and add oil. Stir fry chicken on medium high heat until done. Add vegetables and black bean sauce. Stir fry for one minute. Combine water, cornstarch and sugar then add to vegetable mix. Bring to a full boil and continue to cook until vegetables are tender. Serve with rice or noodles.
