Mt. Fuji Salmon

A salmon that grows slowly in the abundant spring water of Mt. Fuji. It has a firm texture and a pale color, but rich in sweetness and umami. Great to serve as sashimi!

Shima Aji

Light, buttery, and tender, this lean fish has a firm texture and a sweet, delicate finish. Perfect as sushi or sashimi, shima aji is typically topped with ginger, grated daikon, or green onion.
