Enoki Mushrooms 

Enoki mushrooms are delicate, slender mushrooms that are especially popular in Japan, Korea, and China, where they’ve been cultivated for over 1,200 years.

Unlike most mushrooms used in cooking, enoki mushrooms have long, thin stems and small caps, growing in tight clusters. Cultivated enoki are typically creamy white in color due to being grown without light, while wild enoki may have darker beige or brown caps.

Enoki mushrooms are very versatile in cooking.  They are commonly added to soups, stews, and hot pot dishes like shabu shabu and jjigae, where their delicate texture compliments other ingredients.  They can also be enjoyed grilled, roasted, or wrapped in thinly sliced pork belly or bacon and fried. Marinated and stir-fried enoki is another popular preparation. Their mild flavor and tender texture make them an excellent addition to a variety of dishes. 

Although enoki mushrooms are primarily composed of water, they’re also a good source of complex carbs and protein, plus healthy unsaturated fats.
