Kakigori

Kakigori is a traditional Japanese shaved ice dessert. Dating back over 1,000 years, the earliest versions were enjoyed by nobility during the summer. Today, kakigori is a popular summer treat, found in street stalls and at festivals across Japan.   

While similar to American snow cones, kakigori is distinguished by its fluffy, snow-like texture, compared to the sharper ice crystals of a snow cone. It is sweetened with a variety of syrups, including traditional Japanese flavors like matcha (green tea) and sweet plum, as well as familiar fruit flavors. 

Kakigori can be topped with more than just syrups. Common additions include condensed milk, tapioca, fresh fruits, mochi, and adzuki red bean paste, making it a great customizable dessert for everyone. There are even boozy versions called yakigori, where brandy or other liquor is poured over the ice and lit on fire for a dramatic presentation. 

Although making kakigori at home can be challenging due to the need for specialized equipment to achieve the perfect ice texture, shave ice machines and syrups are available at Uwajimaya during the summer months.
