Pork Sung

Also called "meat floss" in English, pork sung is much more appetizing than its name suggests.

Made primarily from dried pork—though chicken and beef versions also exist—pork sung is crafted through a meticulous, multi-step process. It begins with stewing the meat, followed by shredding and partially drying it. The final step involves the meat in a wok with soy sauce and spices, completing the drying process while infusing it with a savory and slightly sweet flavor.

The result is a light, airy bundle with a texture similar to coarse cotton candy that melts in your mouth. Pork sung is a versatile ingredient, commonly used as a topping for congee, a filling for buns and pastries, or simply enjoyed as a snack on its own.

While pork sung is most popular in China and parts of Southeast Asia, similar versions exist worldwide. In some regions, including parts of Africa, local adaptations are made with different meats to suit local tastes and dietary practices.
