Rice Paper
Bánh tráng, used for fresh and fried spring rolls, is made from rice flour, tapioca flour, and water. The tapioca adds a smooth, springy texture and to use it, the paper is typically dipped in water for a few seconds to rehydrate before being wrapped around filling to make rolls (and then fried to add crunch).
There are also other types of rice paper, such as bánh đa nem (made from rice flour only) and bánh tráng mỏng (made from tapioca flour only). Some varieties include additional ingredients like coconut milk, chilies, or sesame seeds for added flavor.
Beyond fresh and fried spring rolls, rice paper can also be baked, toasted or dried and used as a topping for salads, soups, and stir-fries. Toasted rice paper is often enjoyed as a crunchy snack.
