Shumai
Unlike fully wrapped dumplings found across many cuisines, shumai are “open faced” dumplings. There are variations of shumai throughout the country and in neighboring cultures, but the most famous version in North America is the Cantonese shumai.
Typically filled with ground pork, aromatics like ginger and scallions, and often mushrooms or shrimp, shumai is wrapped in a thin yellow or beige dough—left open at the top and garnished with a pop of color, such as crab roe, a pea, or a bit of carrot. Other regional varieties of shumai can include glutinous rice, radish, mutton, or beef.
Just like other Cantonese dumplings and light dishes that are somewhere between “snack” and “meal,” shumai is a common choice in dim sum eateries.
